If you’re a vegetarian, you can make your own version of this recipe. Any combination of minced veggies or panner works. A non-vegetarian who does not want to use chicken can also use ham or sliced beef instead. Here, the bread shape is like a braid, but you may customize the form any way you desire, making it resemble a stuffed bun or even rolling it into a pinwheel.

Ingredients for Dough

  • 4 cups plain flour
  • 1 tsp salt
  • 2 tbsp powdered milk (optional)
  • 1 tbsp instant yeast
  • 2 eggs
  • 4 tbsp. oil
  • 1 tsp. castor sugar
  • 1/4 tsp baking powder (It helps to reduce yeasty smell)

Ingredients for Chicken Filling

  • 2 cups boiled chicken or shredded raw chicken 300 gm
  • 2 small size chopped onion
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 medium green chillies (chopped)
  • 1 tsp garam masala powder
  • 2 tbsp coriander leaves
  • 2 tbsp flour
  • 2 tbsp butter
  • 1 cup milk
  • sesame seeds as required

Instructions

For the Filling:

Take a non-stick frying pan and set the heat to medium-low. Place two tablespoons of butter on it and let it melt. Then add the chopped onion to the pan. Stir gently with a silicone or wooden spatula for one minute or until soft. Finally, add 2 tbsp flour, 1 tsp salt, 1 tsp black pepper, and 1 tsp garam masala to the pan and stir thoroughly for one minute at low heat.

Now pour the milk on top of this mixture and simmer until thick. After that, add the shredded chicken, chopped green chilies, and coriander leaves to the sauce. Stir them once again until the liquid portion is removed and gives the filling a sticky texture. Then remove the pan from the heat. Allow them to cool completely before using them in recipes.

For the Dough:

In a mixing bowl, combine 4 cups flour, 1 teaspoon salt, 1 teaspoon castor sugar, 2 tablespoons milk powder, 1 tablespoon yeast, 1/4 teaspoon baking powder, 4 tablespoon oil, and 1 egg. Knead the ingredients together until they form a soft dough. You can add warm water slightly if necessary. Now set the bowl with a cover at room temperature. Step by Step process on how to bake chicken stuffed bread:

Step 1: Divide the dough into two or three pieces depending on the type of chicken bread you want.

Step 2: Now, take one small piece of dough and roll it into a rectangle shape. You can brush some butter over it for extra softness or make it tastier.

Step 3: Place the chicken filling in the center of the rectangle, then cut slits on both of the longer sides.

Step 4: Bring the topmost slit ends together from left to right and then back again crosswise.

Step 5: Continue doing so, moving your strings forward every few rounds. A crisscross pattern, moving left to the right.

Step 6: As you go further down the bread with the crossing of the sides/braiding, this is how it will appear.

Step 7: When you get to the end, leave a tail at the bottom for show. If you like, you may neatly tuck everything in, but I prefer to have that little bit of a tail at the bottom of the loaf.

Step 8: Grease a tray and place your bread on it. The recipe instructs you to make two loaves, but I prefer dividing it into three pieces and making three smaller loaves. That is entirely up to you!

Step 9: To finish, brush it with egg wash and sprinkle sesame seeds. Preheat your oven and bake at 200 °C for 25 minutes or until golden brown, brushing halfway through cooking. (Egg wash means beating an egg with a teaspoon of water and brushing it over the bread)

Step 10: That’s all there is to it! Now you can enjoy your delicious chicken bread!!

After taking it out of the oven, brush it with butter and let it rest covered for 2-3 minutes to totally soften it completely.
